Conclusion:

The Coorgs are the only group of ethnically distinct people in the contemporary world that has successfully resisted the influences of the modern Indian lifestyle, which has gradually changed the landscape of India. In all these years, it was loved and admired, for it served as a settling piece of Indian customs, which they complemented by their longstanding food traditions.

These menus give us a taste of Kodava’s culinary heritage, which has been evolving with the availability of components in the environment and among spices that are distinct only in their flavours. They have not changed over the years since they were passed down from generation to generation. In every dish, Kodavas create a mix of flavours, which reflects the community’s unique cultural heritage and a generous supply of food grown locally.
